Our third and final course was held at Hidden Hanoi, a company specializing in cooking classes, language courses and walking tours. The charming garden venue on the edge of West Lake makes the perfect backdrop to an intimate setting. In place of a market tour, Miss An used her perfect language and quick wit to give us a light-hearted introduction to the culture of a Vietnamese kitchen, the principles of Vietnamese dining, and the combination of tastes and flavors that make up a standard meal. Hidden Hanoi is different from the others in that following a short demonstration of each dish, participants are arranged around separate workstations armed with recipe books to cook hands-on under An's ongoing supervision. The atmosphere is creative and informal.
Participants are presented with the choice of 4 different menus - "street", "seafood", "village" and "monsoon". Our group took the seafood option, which included Fresh spring rolls, Sweet and sour shrimp, Fish broth and Green papaya salad. After working on our individual challenges, we joined up to roll fresh spring rolls before sitting down to dine on the very delicacies we had just produced.
After all, food is one of the most elements of any culture. What better souvenir to take home than a gift that you can invite others to enjoy time and time again?
